 The Grand Hyatt Jakarta has appointed Paolo
Cerro as Director of Food and Beverage and Marco Pistillo as
Executive Sous-Chef.

Paolo Cerro

Born in Pontecorvo, a quaint Italian town close to
Rome, Paolo Cerro has spent almost two decades working in notable
establishments in various countries.

He spent time working at Walt
Disney World Resort in Florida before joining the Machiavelli
Group in Sydney as General Manager, and worked as Operations Manager
of the
Fairmont hotel in Singapore, amongst others.

His expertise in culinary
covers fine wine selections, guest services and restaurant
management.

Paolo now oversees six restaurants at the Grand Hyatt
Jakarta, namely C’s Steak and Seafood, Sumire, Grand Café,
Fountain Lounge, Poolside Restaurant and La Moda.

He is also in
charge of the banquet service, in-room dining and the Grand Club
lounge on the 22nd floor.

Chef Marco Pistillo has been with Hyatt for almost a decade. He joined
the Hyatt Regency Danang Resort
and Spa in September 2014 as Sous-Chef, leading the restaurant to earn ‘Best Team of
the Year 2015’ for Hyatt Asia-Pacific.

The Italian chef then
moved to Grand Hyatt Shenzhen in China, prior to launching
Verso at the Grand Hyatt Abu Dhabi and winning ‘Best Newcomer
Restaurant’ in Time Out Abu Dhabi Restaurant Awards 2018.

After a short return to Hyatt Regency Danang
Resort and Spain Vietnam, Chef Marco decided to join the Grand
Hyatt Jakarta where he infuses Italian finesse into signature
dishes at C’s Steak and Seafood.

Live food
preparation is at the heart of the overall ambience at C’s Steak
and Seafood with the chefs
taking centre stage as guests enjoy the activities of open
kitchens at close range.
